I actually dreamed about eating stuffed eggplant last night, and it was so delicious in my dream! I don't think I've ever had it in real life though, but it got me curious about trying to make stuffed eggplant. Does anyone have much experience cooking eggplant?? And by the way, I was reading about it online, and I read somewhere that eggplant is actually a BERRY! :-S

sure is, but do you know what is even more yummy is the flowers. My grandma was the best in frying these up! Delicious! :frog

I think a lot of it has to do with the recipe. It's just like the times I used to abhor zucchini until my wife and daughter put together the most delectable recipe on earth with it. It had chicken, Pepperidge Farm corn-bread stuffing mix, sour cream, zucchini, salt and pepper to taste and a few other nifty things. :thumb :lol

You have to pick them in the morning while they are still open. From what I understand,(having never gardened myself) they just keep reproducing. My grandma used to dip them in egg and flour and fry them up sooooo yummy. They are even good cold.

They are just like many other blossoms:::::::: Squash, pumpkin, nasturtium, and quite a few others. Simply batter-dip them and fry 'em. YUMMMMMMMMMMMY!!!! :clap:

Also, like many other plants, the more you pick the more the plant will produce. Just like sweet peas, marigolds, petunias, calendula, cleome, etc.

she did squash flowers also. I don't remember there being a difference in the taste.

Eggplant Parmesan is deeeeeelicious!!! It is a lot like lasagna. An easy recipe is to slice an eggplant and dip the slices is a bowl of beaten egg and milk. Then dip the slices in salted and peppered flour. Fry the slices in oil til golden brown. Drain on paper towels. Then spray a 9x13 glass pan with Pam and then pour some Prego in the pan. Then place a layer of eggplant slices on the Prego. Then put on a layer of shredded mozzarella cheese and a layer of fresh parmesan cheese. Then repeat the layers. Bake at 350 degrees til bubbly: about 20-30 minutes. CJP56
