We had Mexican last night. Nachos, to be specific. Nummo!

Our ladies are meeting for lunch today at Applebee's. Even though it's so early, usually when I have lunch out I'm not hungry for dinner. I'm sure hubs will have his usual massive plate of veggies (raw...he likes to crunch lol).

Tonight we finished up the Italian ? casserole my wife made on Sunday. It's lasted 3 days. Thank the Lord for that.

Sounds good. What is an Italian Casserole,  do you have a recipe?

I believe she used Vidalia onion, red and green pepper, a couple of cloves of garlic, black olives, ground beef or venison, and Italian seasoning.  It's very good.

Tonight we're meeting one of my brothers and his wife at the Cracker Barrel for dinner. I haven't seen this brother in over four years...at my sister LeAnnes funeral. They're on their way to a wedding in Seymour, Indiana. It's my SILs niece. I also have a niece, and 2 great nephews in Seymour. They came through last week. Vivian and I usually get the chicken fried steak. YUMMY!!!

By red and green pepper do you mean chilies?

Quite possibly dinner tonight will be bean with bacon soup and crackers/sandwiches.

Nothing wrong with that! We do that quite often, especially when it's a night loaded with a lot of things we have to do.

I'm not usually a soup person, but I've been hankering for some. Bean w/bacon is my fave. So I picked some up and voila! Dinner. Hubs was glad. He'll eat his plate of raw veggies as well, but he's fond of bean/bacon also.

For Vivian and me, right now the soup of choice is Progresso Lasagna soup. I didn't think I would like it at first, but it is great!

No.. Sorry. I should have clarified that. Bell peppers are what she uses. ?

Well here what you call  bell peppers, we just call peppers, and chili just chili.  I have met Americans who when the refer to pepper mean chili.

At the weekend I did slow cooked beef stew for me and vegetable and bean stew for Kay.  It lasted for 3 days finishing it up today for lunch. There was enough gravy left, just, for me to make into hot and sour soup served with homemade wholemeal bread this evening.  Kay had a spring roll and a couple of camembert  bakes.
