That is what the recipe is titled - Beef Porcupines


All that means is that it is a meatball with rice in it so it has somewhat of a "prickly" appearance.

Mix together 1 lb. ground beef, 1 box of beef flavored rice-a-roni (minus the seasoning packet) and 1 egg.

Shape into 1 1/2 inch meatballs. In a skillet, brown in oil over medium heat.

Mix together 2 1/2 cups of hot water and the contents of the seasoning packet. Pour over meatballs. Bring to a boil and then turn down to low. Cook for approximately 20-25 minutes or until most of the water is gone. Add 1 can cream of mushroom soup and simmer 5 minutes.

Totally delish! Awesome with mashed potatoes. :D:D :D

Trouble in the kitchen at my house,,,,,,,,Bible Totin Gun Slinger cookin again.......
I through a bag of Little Smokies in a sauce pan, sizzle em fur a bit and throw in a can of Bush's Baked Beans.

Feeds 2, throws wifes blood sugar off the chart, warms the bones.

Talk about porcupine meatballs - my wife and I made up 6 lbs of meatballs the other night. We make up a large batch, and put them in the freezer in baggies for when we need a good, hearty meal.

We have similar problems :D but that does sound good.
