Whats for Supper...

This evening we're having the last of the spaghetti that my wife made last night. It's got a wonderful, thick meat sauce that has onions, green peppers, garlic, salt, and pepper in it. With this, we're having part of a garlic bread loaf we picked up from Walmart. It's so great to have some foods that will last two or three meals so that I don't have to cook so many nights. Tomorrow is going to be a LONG day with me going to physical therapy at 7 am, then to be evaluated for new hearing aids at eleven, thirty-five miles away at 11 am.  I need to come home in between and take the dogs out for a walk and potty break. Then, by the time I get home..around 1:30  pm, I will have to start getting ready for men's Bible Study at "The Door" church in Unionville, Tennessee. Many of the men from the Bible study that we had in the Cowboy Church movement are going to this with one of the men who graduated from the Ministry Certificate Development Program with the AFCC (America Fellowship of Cowboy Churches) is the one who is leading them. He and I started the program together back in 2020. I didn't get to finish, as I contracted Covid both August beginning sessions, knocking me out for the final two years. So, tomorrow evening will probably be Tomato Basil soup.

The last two evenings we have had rice & tomato soup with fresh, homemade cornbread!  This soup has ground chuck, one small onion, two cloves of garlic, two cans of diced tomatoes, one small can of Rotelle, three tbsp of onion powder, one tbsp of garlic, salt and pepper, and three cups of beef broth.  It's wonderful comfort food. We usually have this once a month. If you like spicy food you can add a second can of Rotelle. Yummy!

We have a special dinner on Tuesday nights, since that is the night of my Bible study with our newest church member. She comes at 6 and we feed her physically and then spiritually. We try to think of different things to fix that we all like. This last week we had chili dogs again...something we all like. This Tuesday we're thinking about stuffed peppers. Haven't had those in years.

We had. Church lunch today, plenty of choice. I was gong to make a dish,  but decided not to as there is always plenty left over.

Tonight we're having the leftovers from last night, homemade hamburger and potato casserole! Bread and butter will accompany the main dish, and homemade zucchini bread for dessert. Yummy!!!

It's been quite a while, so we're going to have pizza for supper tonight. I have a Bible study on Tuesdays with one of our ladies. She comes early enough for supper and then we study.  It's been a couple weeks since we've met for the study so I'm looking forward to it.

I just had to comment on this. My brother loves to make spaghetti sauce, and he LOVES meaty. His sauce is, to me, more like sloppy joes. I like more sauce with mine or it's just meat and pasta. lol. But as I read your post again, I thought you might like his sauce. It's definitely one that most men like (and women who like lots of meat lol).

I just had to comment on this. My brother loves to make spaghetti sauce, and he LOVES meaty. His sauce is, to me, more like sloppy joes. I like more sauce with mine or it's just meat and pasta. lol. But as I read your post again, I thought you might like his sauce. It's definitely one that most men like (and women who like lots of meat lol).

We make the homemade meat sauce because we both grew up with the watery store bought sauces. When we first got married 40+ years ago that was all we could afford. 

I bet I would love your brothers sauce. 

Tonight we're having polish sausage with carrots, potatoes, onions, and mushrooms if I can find a can of them. This will go for 2 nights for under $12. We went grocery shopping Sunday and our grocery bill for the week, possible 10 days, was almost $300. Milk is up over $3.25 a gallon, and bread was $2.48 a loaf. Most canned goods here are anywhere from 98 cents a can up to over $3.00 a can. Vivian nearly cried when they finished up the things on the conveyor belt. Lord help us if we have another 4 years of these people in office.

Today is Tuesday and my Bible study with one of the ladies of our church. She comes for dinner beforehand, so we always try to do something tasty. Tonight will be tacos. Yum!

Tomorrow we have a church outing - the first of what hubs wants to do annually. There is an airport museum just down the hill from our church, so we are meeting there tomorrow morning at 11 to tour the museum. It is not large, but I think it will have some neat stuff in it. My brother is looking forward to it because he was an aviation tech till he retired. He's also looking forward to meeting folks he knows who work at the airport (his job introduced him to LOADS of people). 

Anyway, after the tour, we are heading to a park for a picnic. I'm providing fried chicken and potato chips. My mom is making a couple different kinds of sandwiches. There will be chili, potato salad, fruit, dessert as well. I think it will be fun. 

After the picnic, we will have a short service instead of folks coming back that evening (we have some elderly who cannot make it to the picnic and then also a night service). It's going to be a fun beginning of a tradition.

So right now in our kitchen, there is a pot of chili on the stove, a crock of meatless chili cooking, and two crocks of chicken enchilada soup going. We are having Friend Day at church tomorrow, and for the meal we are doing soups. Others are making veggie beef soup and Bortsch (yum!). We'll also have salad and crusty bread. 

The reason for meatless chili is that there is a possible guest who cannot eat beef. He also cannot have dairy, hence the two chicken enchilada soups (the recipe calls for cream cheese and heavy cream). My bro, who is making the chili that has meat, tasted the meatless and told me to be sure and bring it home tomorrow if it doesn't get eaten cuz it's tasty. lol

We have 6-8 commitments, with a few other maybes for tomorrow. We are thrilled and praying that God will really bless the services.
