A couple of years ago we were served a breakfast casserole that was absolutely delicious. It consisted of hashbrowns, eggs, sausage, cheese...and I can't remember what else. I would like to be able to fix this on Christmas morning for my parents and us. Does anyone know what I'm talking about or have a recipe for anything similar? Thanks.

I've had something like that - really nice.

But I just eat the stuff, can't cook much more than toast! :lol::lol::lol::lol:

When my wife sees this she will post something up, I am sure!

Here's one:

SAUSAGE, EGG, HASH BROWN CASSEROLE

1 lb. sausage
9 lg. eggs, slightly beaten
3/4 c. milk
1/4 c. melted butter
24 oz. pkg. hash browns
8 oz. shredded cheddar cheese

Preheat oven to 350 degrees. Layer sausage on bottom of well greased 9"x13" pan. Add milk and butter to beaten eggs and pour over sausage. Add hash browns and top with shredded cheese. Bake 1 hour.




My family loves the following recipe!!! It is wonderfantabulous!!! It doesn't have hash browns in it but it is a great breakfast casserole.


SAUSAGE AND CHEESE CASSEROLE

8 slices of bread, cubed
1 lb. sausage, browned and drained
2 c. sharp cheddar, grated
4 eggs
1 tsp. mustard
3 cups milk, divided
1 can mushroom soup

Place bread in a greased 9x13 pan. Sprinkle sausage over bread; sprinkle cheese over sausage. In a bowl, mix eggs, mustard, and 2 1/2 cups of milk. Pour over layers in pan. Cover and refrigerate 3 or more hours or overnight. When ready to bake, mix soup and 1/2 c. milk and pour over all. Bake uncovered 1 hour at 350 degrees.

2 lb. bulk sausage
1 cup chopped onion
1/2 cup chopped celery
8 cups of hash browns, tater tots, or scrubbed and diced potatoes
24 oz. shredded extra sharp cheddar cheese
10 large eggs
Salt and pepper to taste

Preheat oven to 350 degrees.

In a large roaster, mix by hand the sausage, chopped onion, chopped celery, taters, and some salt and pepper. Beat eggs and pour over this mixture. Sprinkle the eggs with salt and pepper. Top with shredded cheese.

Bake covered for 45 minutes to 1 hour, or until done.

This recipe makes a large amount but when you taste it you'll be glad for the leftovers. :Green
