Nope, not racist, just funny. And no, "we all" don't know that Chinese don't talk like that. Jackie Chan, who is Chinese, often gets great laughs using such gags; as do others of Chinese background.

I've had a few Oriental friends who spoke similarly. We would poke fun at one another about our different pronunciations of things. Not racist, no offense, just fun.
