There's a 20 year old guy visiting us here for 2 weeks. He's not staying with us, but he's over at our home for supper each evening. Usually in the evenings we have leftovers every few nights or sandwiches or just something simple like that. However, with him here, I'm feeling then need to come up with good new meals every single night. He's already been here a week, but I need a few ideas for this week. Tonight I think I'll just heat up some frozen pizzas I got today since it was a crazy day, and then I have beef for a crockpot roast one night. And I'll probably do my favorite crockpot chicken meal another night - you know, the one with cream cheese in it.
Any other fairly easy suggestions to get me through the rest of the week? We've already had lasagna, sweet/sour chicken, chili/rice/cheese/rolls, sandwiches/chips, ummm that's all I can think of now.

This one always works for me:

TUNA TETRAZZINI

(Serves 6)

1/2 c. margarine
2 onions, sliced
1/4 tsp. salt (season to your taste)
3/4 tsp. black pepper
1/4 c. flour
2 c. water
1 bouillon cube
1 c. cream
1/4 c. sweet sherry (can be substituted with apple juice)
1- 1,5 can tuna
1/2 lb. sliced mushrooms
parmesan to taste
20 Oz. noodles

Saute onions and mushrooms in margarine
Dissolve bouillon cube in water, add cream and sherry/ juice
Make roux adding flour to margarine
Mix liquids in
Boil, remove from fire
Add tuna

Serve on pasta garnished with parmesan.
