Ok so I had a lady request mint buttercream for her cake today. So I put a whole (tiny) vial of creme de menthe oil and then needed a whole vial of peppermint in my buttercream (larger cake). Tinted it very pale green (the green makes it taste better! :ha).

Tasted pretty good...but then I had an idea....

I took a little piece of chocolate cake I had extra in the freezer....put a thin layer of the mint bc on it...and then took some leftover dark chocolate ganache and spread that on top. Ohhhh YUM!

I think in March, then the bridal show rolls around, I'm going to make a three layer chocolate cake (a really good homemade one I have, better than the one I had thrown in the freezer) and then one layer of ganache filling and one layer of mint filling. My hubby will hate it, but man....that's good stuff!!!! Or maybe I can put both ganache AND mint filling between each layer....hmmmm.....
