This evening I did left over roast potatoes from our seniors lunch. pepped up with olive oil, powdered garlic S&P and sprinkling of herbes de Provence, and re-baked for 20 mins or so, with Omelette with tomatos and welsh onions, smoked lardons and cheese.

Pardon my ignorace, but what are 'lardons'?

Pardon my ignorance, but what are 'lardons'?

 

Lard is french for bacon.  Lardons are small pieces of bacon about a ¼ of an inch square and about three quarters long.  They are available here in England.  In France they also have a smaller version called 'allumettes'  that is matchsticks.
