Members IM4given Posted July 5, 2007 Members Share Posted July 5, 2007 Yaller Tater Salad 4 med. red or white taters boiled, peeled and diced 1 med. sweet onion, chopped 1/2 c. chopped celery 1 medium green pepper, seeded and diced 1 tbsp. prepared yellow mustard (add more to taste) 1/4 c. salad dressing (mayo type) 2 boiled chopped eggs 1/2 c. chopped sweet pickle relish Put the taters in a big bowl. Add all remaining ingredients and toss, being careful not to smash potatoes. Cover and refrigerate overnight - it helps the flavors to blend. That's probably because I goop it up with mayo, mustard, olives, onions, tomatoes, pickles, and whatever else sounds good for the moment.
