Mackerel patties
Rice
Spinach (and yes, my children do like it!) :mrgreen:




[u]Mackerel Patties[/u]

1 can mackerel
1 egg
2 T. flour
Onion, paprika, salt and pepper to taste (translation: I don't measure :D )

Mix together until well-blended. Form into thin patties about 1/8 inch thick and about 3 inches across. Fry in 1 T. butter until golden brown on both sides.

About like salmon patties...

We had riblets, mashed potatoes w/gravy and rolls... no dessert!!!

I am glad to be back home.. I had forgotten that they DO NOT HAVE sweet tea in Indiana... I was never so glad to have my SWEET tea back!!! :mrgreen: :mrgreen: :mrgreen:

Tonight we had hamburgers... and left over mashed potatoes :roll: I know, what a strange combo... but I wanted to use uo the rest of the taters!!! It is about one of the only leftovers that we will eat!!!! I think that it is to hot to grill out...I keep my house at 65 degrees, so I would much rather cook INSIDE :mrgreen: :mrgreen: :mrgreen:

Yep, Friday is our Pizza night too. :D Hubby picked up a 16-incher from Kroger (a take-n-bake). It was good, and we have half of it left which we'll probably have tomorrow night after we get home from fishing. :D

Frito Pie is very easy to make!

You are just layering things..

In a greased pan....

Layer Fritos on the bottom
Then spread chili over the fritos(you can make your own chili or you can use a canned chili) I use about 3-4 cans depending on the size that I am making at the time.
Then you spread cheese over the chili layer...

You do the layering twice.... the last time crunch up some Fritos for the top...

Bake at 350 for about 30 minutes or until bubbling on the top.

You can garnish with sour cream... and sometimes we use salsa...

I usually serve a green veggie to go with it... a salad would be nice!

Last night was pizza... Tonight we are grilling out hamburgers and hotdogs, also having potato salad, and banana pudding(a dessert staple in the SOUTH :mrgreen: ) My hubby loves banana pudding!

Tonight we'll grill the other 3 steaks, with a vegetable (most likely squash, peppers, and onions from our garden) and some type of side dish (either pasta or rice). We're staying home today and relax'n. :D

We had a humongous roaster pan filled with my wife's Four Bean Casserole. It's essentially homemade baked beans by any other name, but there're four different varieties including brown sugar, bacon, ground beef, BBQ sauce, smoke flavor (if you like that) and worcestshire sauce. It is sooooooooooo gooood. :mrgreen: :mrgreen: :mrgreen: :mrgreen: :mrgreen: :mrgreen:
