Last night was Kentucky Fried Chicken. Tonight it's the leftovers. Yum.

bibletoter: rinsing rice is a good idea if it's whole grain. Usually the boxed rices don't need it. LC is actually easy to make (that is what we have for Christmas every year). The easy way to make it:

Fry up your ground meat (whatever kind you prefer works)
In a bowl:
Mix the meat with spaghetti sauce. Make sure the sauce is a bit runny - if I use jar sauce, I usually use 2 jars per pound of meat. Add a large carton of cottage cheese (again, per pound of meat) and mix thoroughly. Have shredded mozzarella cheese ready.

In pan: cover the bottom of the pan lightly with the sauce you've made, sprinkle some mozzarella. Layer lasagna noodles. There is no need to cook the noodles because you'll be baking them. The noodles will soak up the sauce. Cover the noodles with sauce. Layer of mozzarella. Layer of noodles. Layer of sauce, etc....finish with a layer of sauce, making sure the noodles are completely covered or they will be very hard!

Bake in the oven at 350 for about an hour (or until a fork will go through the noodles smoothly). You can cover the lasagna if you want to. About five minutes or so before taking it out of the oven, spread mozzarella over the top; bake until cheese is melted. Remove from the oven and let sit for a few minutes to set up - so it won't be runny when you slice it.

Enjoy. :icon_smile: As I said, that's the easy way to fix it. We love it with homemade sauce, but in a pinch, the jar sauce works great. Putting the noodles in uncooked saves a good bit of time as well. There are actually noodles now that are kind of pre-cooked. I don't recommend those because they are kinda pasty when baked.


I think most lasagna is precooked these days. Just make sure there is enough sauce between the layers to stop them touching. You can also get fresh lasagna which has not been dried, in the chiller aisles, which is nicer.

Today: Stir fried vegetables and prawns with French bread.

My favorite brand is still not precooked. Yes, enough sauce is vital! I didn't know there was fresh lasagna! I've not seen any - I'll have to look for it. I'm sure that would be tastier!

We had pizza last night instead of KFC leftovers. We've been munching on the leftovers for lunch... :clapping:

I think most, if not all, of our supermarket chains sell all sorts of fresh pasta, certainly Sainsburys and Tesco do. You can roll up the lasagna pasta and slice it into tagliatelle, or other types of pasta.

Lunch we had leftovers, supper I had frenchbread sandwich with smoked garlic sausage, tomato and watercress.

Soupe au pistou, with French bread.

I have a ferry booking to go to France tomorrow. I hope the weather is better than is has been in the last three days. We have had storms with winds up to 100mph in some places, not quite that here, but at present I can still hear very strong gusts outside. The Port of Dover where we will be travelling from was closed twice a couple of days ago, due to the strength of the winds.

Well, we're having pizza again. Meatloaf will be tomorrow night. In my new, fancy meatloaf pan. :icon_smile:

Would love to try that meatloaf from your new, fancy meatloaf pan! I haven't had a really good meatloaf since my Mom passed away. (Nothing against my wife, meatloaf is just something she doesn't have a knack for)

I just whipped up something.
I put in the pasta shaped like the pasta in the soup pasta e follgi at olive garden how you spell it LOL into boiling water.
I boiled the pasta for about ten mins then I put natural basil pasta sauce.
I simmered that.
Then while that was simmering I got together my french cut green beans and kidney beans.
I placed that in the skillet I used for the pasta and I simmered that until it was cooked.
Then I served.
My husband had leftover chili.
