Here's the recipe...

Southern Fried Chicken

2 3-pound frying chickens, cut into serving pieces
2 eggs
1 cup milk
2 teaspoons salt
1/2 teaspoon black pepper
1 cup flour
shortening or oil for frying
1 tablespoon flour
1 cup light cream, scalded

Rinse and thoroughly dry the chicken pieces.

In a bowl beat the eggs until foamy. Add the milk, salt and pepper. Mix well.

Dip the chicken pieces in the egg mixture. Make sure all the pieces are covered and let them stand in mixture for 10 minutes. Remove the chicken pieces and roll them in the flour. Make sure the pieces are well coated. Shake off the excess flour.

In a deep skillet, heat the shortening or oil to 360 to 365 degrees on a frying thermometer. Place a few pieces of chicken at a time into a frying basket and lower it into the hot shortening. Fry until the pieces are golden brown on all sides, apporximately 10 to 15 minutes. As the chicken pieces are cooked, keep them hot until all the pieces are done.

To make the creamy gravy, place 2 tablespoons of the shortening the chicken was fried in into a saucepan and heat. Add 1 tablespoon flour and stir until mixture is smooth. Very slowly, add the scalded cream. Stir the mixture constantly until it reaches the boiling point. Remove from heat and season to taste. Serve over the chicken pieces.
